Having unique experiences as a Vietnamese born in Japan and a Japanese originally from Vietnam, I am honored
to express “inspirations on a plate” to share my findings of beauty, warmth and impression in my journey
through two cultures.
A second-generation immigrant born and raised in Tokyo whose parents came to Japan as refugees from the
Vietnam War. Started her career at restaurant Stellato when she was 17. Moved to Hiroshima in 2019 in
order to manage parenting and working as a chef, also to be closer to local farmers; visiting domestic
and foreign producers as her lifework. Opened CHILAN in September 2020. She takes inspiration from art,
design and natural wines.
Born in Hatsukaichi City, Hiroshima. Moved to Tokyo following his dream to become a jazz pianist but
working in the restaurant made him devoted to wine. After working as a manager at Akasaka Celebourg
Group, he joined Wine Shop Fujimaru. While working as a wholesaler and a wine consultant for starred
restaurants, he decided to return to Hiroshima in 2019 and co-founded CHILAN. JSA Certified Sommelier
and A+ Australian Wine Trade Specialist.
1985年生まれ。広島県廿日市市出身。ジャズピアニストを目指し上京したはずが、南青山レストランフォレストに勤務したことでワインに目覚める。赤坂セレブールグループにてマネージャー職を経て、ワインショップフジマルに入社。業務卸営業・星付きレストランのワインコンサルティングとして勤務する傍ら、2019年Uターンし、生まれ育った地元宮島対岸に「CHILAN」を共同創業する。JSA認定ソムリエ、A+

Message
Natural wine is not something that can be clearly defined in words, but we personally understand it as
“how to live”; We are greatly influenced by the people who coexist with the rapidly changing nature by
listening carefully to whispers of vineyards and producing wine with enthusiasm. We hone our visions
through the liquid which reflects the life of the producers, who rejoice the harvest and sometimes get
through harsh times but never forget to appreciate nature. It is just like our milestone which tell us
that the world is way much bigger than we actually see. “Only who can adapt to fluid environments would
survive.” That has always been a simple and cruel rule of nature; we should keep in mind that there is
nothing convenient in nature designed for individuals.
Nature: It means competition, struggle, predation, survival, and development in the food chain that is
always happening around us, and it is not just a beautiful fantasy.

At CHILAN, you can purchase Fujii’s select wines, including natural wines from around the world, and
Vietnamese cacao chocolate bars used in the course menu at the online shop. We also have connections with
importers that we have built up at wine shops, so we can also accept requests and consultations for special
wines.
